Blueberry, Apricot and Rice Pancakes
Blueberry, apricot and rice pancakes are quick and easy to make and are so tasty! This recipe is so easy to make and will have the kids wanting more! Also makes a great after-school snack.
You will need:
1 x packet shaker pancakes (pre-shaken using instructions)
1 x packet of 90-second basmati rice
1 x tin apricot halves, drained and chopped
1 x punnet of fresh blueberries.
Combine everything in a bowl, giving it a gentle stir.
Dollops spoonfuls onto a preheated cast iron pan.
Cook until bubbles appear then flip.
Cook for a further 30 – 60 seconds then serve!
