Aussie Date Damper
Today Mick from The Cast Iron Boys shows you how to make an Aussie Date Damper. It is quick and easy, and delicious served straight from the camp oven with butter and maple syrup.
Ingredients:
300g self raising flour
Pinch of salt
3 tbspn white sugar
1 tspn cinnamon
1 tspn nutmeg
80g butter
250ml milk*
1 cup pitted dates, roughly chopped
Method:
Combine flour, salt, sugar, cinnamon and nutmeg in a bowl and mix well with a spoon. Using your fingertips, rub in butter to resemble fine breadcrumbs. Gradually add the milk. Stir until just combined then add in the dates and knead to combine. Turn dough out onto a floured surface and knead till soft. Remember, damper is not a bread, it doesn’t require a lot of kneading.
Cook in a preheated camp oven for 25 — 30 until golden brown and firm to touch.
NB *Milk is preferable for this sweet damper, but can also be substituted with water.
